Zucchini Rosemary Pie

My mom taught me how to make this delicious and savory pie, it's great warm or at room temperature, great for lunch or a light dinner paired with a salad it's a great meal! Here's how I do it:


Ingredients :

1 large zucchini cut into small pieces

1 medium onion chopped

2 eggs beaten

1/3 cup vegetable oil

1/2-2/3 cup grated Parmesan cheese

1-2 tsp garlic granules or garlic powder

1 cup bisquick (or 1 cup flour plus 1 tsp baking powder if you don't have bisquick)

1 large sprig of fresh rosemary, chopped, or 1 tsp dried rosemary


In a large skillet heat about 1-2 tbs olive oil till it's hot then add the onion, simmer 2-3 mins then add the zucchini plus a good pinch or 2 of salt and fresh ground black pepper. Simmer 3-4 mins till just slightly soft, don't let it overcook, and remove from heat. In a large bowl add thr beaten eggs, vegetable oil and whisk till combined then add the bisquick, fresh rosemary and Parmesan cheese. Fully grease an 8" pie pan and pour the mixture into the pan. I like to top it with additional cheese and chopped rosemary. Bake in an oven preheated to 350F for 30 to 40 mins till golden brown.
