Panna Cotta with Amarena Cherries

I made this for a Valentine's Day as a special dessert and everyone loved it! I used good quality jarred amarena cherries as a topping but you can use any topping you like, fresh fruit, preserves, all work wonderfully well. Here's how I do it:
2.5 cups heavy cream
1 packet .25 oz of unflavored gelatin powder
1/4 cup skim milk or water
1.5 tsp vanilla extract
1/3 cup sugar or sweetener of choice but if you want it to stay white use white sugar. You can add less if you want it less sweet.
1 jar Italian amarena cherries in syrup or topping of choice
In a small bowl add the skim milk or water and gelatin powder, stir and let it dissolve completely for 5-10 mins. In a sauce pan add the heavy cream and sugar and set on medium flame until there's a low boil, do not let it over boil. Add the gelatin mixture and stir let it combine for another minute then remove from heat and add the vanilla. Pour into small bowls and let it cool down completely, this should be enough to make 6 portions. Refrigerate for 4-6 hours or overnight. Before serving add generous scoops of cherries in their syrup or topping of choice and serve.
