Great summer dish when you have lots of zucchini. They can be baked, fried or put in an air fryer to crisp then up, here’s how I do it:
3-4 medium zucchini grated on a box grater
1 egg or for vegan use 1 flax egg
1/4 cup flour, I used gluten free flour
1/2 cup Parmesan cheese vegan or non
1/3 cup chopped fresh herbs I used parsley, basil and oregano
2 tsp garlic granules
Place the grated zucchini in a cheesecloth and wring out all the excess water then place the zucchini in a bowl add the egg, flour and cheese and incorporate then add the herbs, garlic granules and S&P. If frying, it’s how I did it, heat 2-3 tbs neutral oil, I used sunflower, on medium/high heat then drop spoonfuls of the mixture into the pan and fry on each side till golden brown or you can bake them on a parchment lined tray at 375F for 15-20 mins or air fry them. If frying blot them with paper towels, serve warm with a dollop of sour cream, Greek yogurt or creme fraiche.
