Yuba With Baked Tofu, Peas and Scallions
I just love yuba it’s made from soy and is a very thin delicate noodle carb free and lots of protein. It’s not always easy to find but the company Hodo makes a great product and it comes in a nice asIan sauce with notes of sesame and ginger. I combine it with prebaked teriyaki flavored tofu for a quick easy vegan meal that takes minutes. Here’s how I do it:
1 package hodo yuba
1/2 cup peas defrosted
1 block baked teriyaki tofu cut in cubes
4 scallions chopped fine
In a skillet add a little neutral oil then add the tofu and peas and simmer 2 mins then add the yuba and scallions and continue to simmer till everything is combined, if you like it spicy add a bit of sriracha I also like to add a drizzle of sesame oil and splash of rice vinegar, serve piping hot in bowls.
