Vegetarian Lo Mein with Crispy 5 Spice Tofu

This a great vegetarian/vegan main course and you can use any protein but the crispy tofu is super tasty with the addition of Chinese 5 spice blend. Here’s how I do it :

Ingredients

1 12-14 oz package lo mein noodles, cooked per package instructions

4 scallions chopped

1-1/2 cup shredded veggies I used cabbage, carrot and yellow squash you can use any shredded veg

1 cup bean sprouts

1 block tofu cubed and patted dry

3 tbs soy sayce

2 tbs oyster sauce

1/4 cup water

1 tsp sesame oil

1 tbs rice wine vinegar

1 tbs agave nectar

2 tbs corn starch

1 tbs Chinese 5 spice blend


In a bowl add the corn starch and spice blend and dredge the cubed tofu in it. If you have an air fryer you can cook that way till crisp or take a large skillet add some neutral oil and fry in each side till crisp then set aside. In the same skillet add a bit more oil then add the shredded veggies and simmer 3 mins then add the scallions and all the liquid ingredients simmer then add the lo mein noodles and bean sprouts then finally add the crisp tofu and continue to toss till incorporated but don’t let the tofu get soft. I like to add a drizzle of sriracha or any hot sauce then serve in bowls with a squeeze of fresh lime.
