Vegan Sag Paneer

I love sag paneer, probably my favorite Indian dish. You can make this vegetarian with real paneer, it’s sold in Indian markets. I used super firm tofu to make it vegan. Here’s how I do it:


Ingredients:

1 block of super firm tofu or paneer cheese

2 bags fresh spinach

2 garlic cloves minced

1 medium onion, chopped

1green chili pepper chopped

1/2 cup coconut milk or heavy cream for non vegan

2 tsp Garam Masala

1 tsp cumin seeds

1 tsp turmeric

1 tsp ground cumin

2 inches fresh grated ginger or 1 tsp powdered


In a large pot of boiling water throw the spinach in and blanch for 30 seconds drain immediately in cold water then drain and squeeze the water out, throw in a blender to purée it or chop it finely with a knife, set aside. Add some olive oil or ghee to a skillet enough to coat the bottom very well and fry the tofu or paneer for 5-8 mins on each side till browned, set aside. In the same skillet add a little more oil or ghee and toast the cumin seeds for 2 mins then add the ginger, garlic, chili pepper and other dry spices and simmer a few mins then add the onion cover with lid and simmer till softened, add salt to desired taste. After it’s all combined add the spinach and coconut milk or cream and simmer another few minutes then add the tofu/paneer till it’s all piping hot and serve over basmati or jasmine rice.
