Vegan Rosemary Chicken and Broccoli
This is one of my favorite dishes, flavorful and healthy, full of fresh herbs. You can use real chicken if you aren’t vegan but I find the vegan chicken strips super satisfying and you can make it in just a skillet. Here’s how I do it:
1 bunch broccoli de-stemmed cut into florets
1 package vegan chicken strips or chicken breast cut into cubes
4 cloves garlic, chopped
chopped hot red pepper or dried red pepper flakes
fresh herbs, or dried: rosemary, basil and parsley
In a large skillet place the broccoli florets with some water at the bottom and steam for about 5-8 mins till the broccoli softens. Drain in colander set aside. Add a few spoonfuls of olive oil to the skillet, wait till it heats up and place the chicken strips in the skillet with a few spoonfuls of rosemary, fresh is always better. Season with salt, brown on both sides remove from skillet set aside. Add more olive oil to the skillet, heat up then add the chopped garlic and crushed pepper, simmer 2-3 minutes then add the steamed broccoli a little more oil and sauté for about 10 minutes stirring often. Add chopped herbs and salt, I like to use fresh basil and parsley. Add the chicken back in and sauté till it’s all piping hot. This can be served over pasta, grain of your choice or on its own.
