Vegan Omelette with Spinach and Herbs

This is a completely plant based omelette using Just Egg, vegan egg liquid. If you’re not vegan feel free to use real eggs but this version is just as rich and indulgent. Here’s how I do it:

Ingredients

1 large bunch of fresh spinach

1/2 cup Just Egg per omelette

1 tsp garlic granules

handful of chopped fresh herbs I used parsley and basil or dried herbs are fine

1/3 cup shredded vegan cheese I used white pepper Jack


In a medium skillet add about 1 tbs olive oil when hot add the spinach, half the herbs, a pinch of salt and the garlic granules and simmer 2-3 mins till wilted, remove from skillet and set aside. Add another tbs of oil to the skillet, pour the Just Egg in, a pinch of salt and swirl till it covers the bottom simmer 2-3 mins then add remaining herbs, the cooked spinach and the vegan cheese continue cooking till the bottom feels firm then with a spatula carefully fold the omelette in half cover with lid and cook another 2 mins on low heat, remove from skillet and serve with fresh chopped parsley and cracked black pepper.
