Vegan Lemon Matcha Cookies with Avocado Cream Frosting
These are a taste explosion the lemon, green and avocado blend really well together give them a try really delicious!
1 and 1/2 cups all purpose flour or gluten free flour works fine too
Juice and zest of 1 lemon plus 1 tsp lemon extract (optional)
1 tsp baking powder
1/2 cup vegan butter I prefer Miyokos softened not melted
1/2 cup applesauce
1/2 cup sugar or you can substitute maple syrup or agave test the batter on how sweet you want it I used a little under 1/2 cup
2 tbs matcha green tea powder
1 very ripe avocado
1 tbs vegan butter
juice of half a lemon
1 tsp vanilla extract
2 cups confectioners sugar
In a large bowl combine dry ingredients then add the juice, zest, butter applesauce etc and combine well to form a dough. Preheat oven to 375. Using a tbs form balls of dough and place on non greased cookie sheets bake middle rack for 8-10 mins till bottom edges slightly brown. Let cool. For frosting place butter and cubed avocado in bowl and with mixer beat till smooth add lemon juice vanilla blend more then gradually add sugar for desired stiffness. Using a tsp place a dollop of frosting on each cookie you can make them fancy and use a piping bag. Enjoy!
