Vegan Lemon Garlic Chicken With Greens

I love this dish, the lemon zest gives it such bright tones and you can make it with real chicken if you aren’t vegan You can use any greens, spinach, kale, etc, I used yu choy, a Chinese leafy green.. Here’s how I do it:

Ingredients:

1 package vegan chicken strips or chicken breast cut into strips

zest of 1 lemon plus 1-2 tbs fresh lemon juice

4 cloves garlic chopped

1 bunch of fresh greens

crushed. red pepper

fresh herbs, I used parsley and marjoram or dried


In a large skillet add a little water then add the greens and steam them for 2-3 mins then drain in a colander. Add some veg oil to the skillet and sauté the chicken strips with half the zest and some of the garlic till browned, set aside. In same skillet add crushed red pepper, about 1 tsp the remainder of the garlic a pinch of salt and sauté 2-3 mins then add the steamed greens adjust salt, add herbs and simmer for 5-8 mins then add the chicken and lemon juice and incorporate till piping hot serve in bowls add a pinch more of lemon zest. Great on its own or over rice or grains.
