Vegan Chocolate Peanut Butter Truffles
It's Halloween and I'm making my famous chocolate peanut butter truffles here's how to make them:
In a large bowl add 6-8 oz of softened vegan cream cheese ( I prefer Miyokos) or regular cream cheese plus 3 heaping tables spoons of smooth peanut butter, 1 tbs cocoa powder and 1/4 cup crushed oreo cookie crumbs (fine consistency). Roll into 1" balls and place on a tray with parchment paper and freeze for 15 mins.
Melt 1 bag of chocolate morsels, I prefer dark chocolate. Place in a glass bowl over a pot of simmering water till all the chocolate is melted. Remove the balls from the freezer and dip each one in the chocolate and re-place on the tray. Before the chocolate hardens you can sprinkle them with decoration of your choice, sprinkles, etc or a coating of cocoa powder. Place tray in refrigerator and remove 20 mins before serving. Boo!
