Vegan Chicken/Broccolini Parmigiana

I had some leftover tomato sauce plus I bought baby broccolini and vegan chicken and decided to combine all of it, was pretty tasty and of course if you’re a meat eater you can use real chicken. Here’s how I do it:


1-1/2 cups tomato sauce, good quality jarred fine

4 cloves garlic chopped

1 bunch baby broccolini cut into pieces

6-12 strips vegan chicken

1/2 cup shredded mozzarella for vegans use vegan cheese

1/3 cup Parmesan cheese for vegans use vegan cheese

handfuls of fresh chopped herbs I used fresh oregano and basil

2-3 tbs Italian bread crumbs

In a large skillet with a metal handle add a little water then add the broccolini and steam till slightly soft set aside. Brush the chicken strips with olive oil then dredge in bread crumbs add oil to the pan and cook the strips for 3-5 mins on each side till golden brown, remove set aside. Add a little more oil then add the garlic, a pinch of red pepper flakes (optional) and simmer 3 mins then add the broccolini and fresh herbs and simmer 3-5 mins, adjust S&P. Remove from heat. Add the tomato sauce then layer the chicken strips on top then add the Parmesan and mozzarella. I like to add some fresh chopped basil. Set the oven to 400F bake for 15mins then switch to broil and broil the top till golden and crispy.
