Vegan Brownies With Peppermint Bark Topping

You don't have to make these vegan, if you have a boxed mix you can use that and just add the topping when it's out of the oven but I love this vegan recipe it's rich and decadent for the holidays. Here's how I do it:


Ingredients:

2 cups all purpose flour, you can use gluten free flour too

1 and 1/2 cups white sugar

3/4 cup unsweetened cocoa powder

1 tsp baking powder

1 tsp salt

1 tsp vanilla extract

1 cup vegetable oil, if using coconut oil reduce it to 3/4 cup

1 cup water


For the bark:

1/2 bar white chocolate or 1/2 cup chips

1/2 bar dark chocolate or 1/2 cup chips

2 candy canes


Preheat oven to 350F. In a large bowl stir together the flour, sugar, cocoa powder and salt. Pour in water, oil, and vanilla; mix until well blended. Spread evenly in a 9x13 inch baking pan. Bake for 25-3- mins until the top is no longer shiny. While baking put chocolate and candy canes on a cutting board and give it all a rough chop. As soon as you take the brownies out of the oven spread the bark mixture over the entire top. Let cool and slice into squares.
