This is such an easy tasty dish to make, a definite crowd pleaser. I made them with edamame but you can add any protein of choice. Here’s how I do it :
Ingredients
1/4 cup peanut butter
2 tbs soy sauce
1 tbs rice vinegar
2 tbs brown sugar or agave
1 tsp chili sauce or sriracha
1 tsp sesame oil
2 cloves garlic minced
1 tsp grated fresh ginger or ginger powder
1 package Thai rice noodles
1 cup steamed edamame or protein of choice
4-6 scallions chopped
sesame seeds for topping
In a small sauce pot add the garlic, ginger, peanut butter, soy sauce, vinegar, sugar, oil and sriracha stir to combine set on very low flame. Add another pot with salted water bring to a boil add the noodles and boil 6-8 mins keep them al dente. Add a ladle or 2 of pasta water to peanut sauce to loosen it to desired consistency. Drain noodles pour sauce and edamame on top and stir till combined. Serve piping hot topped with fresh chopped scallion and sesame seeds.
