This is a delicious healthy soup packed with antioxidants, give it a try!
Ingredients:
1 large sweet potato, peeled and cut into small cubes
2 large carrots sliced
2 stalks celery chopped
1 medium white onion chopped
1 cup red lentils
4 cups water
1 tsp ground cinnamon
1 tbs ground turmeric
1 bunch fresh parsely chopped
handful of fresh sage for garnish (optional)
In a large pot add a little neutral oil I used 2 tbs of olive oil heat up then add the onions and celery simmer 2 -3 mins then add the carrots and sweet potato and continue simmering add a pinch or 2 of salt and the chopped parsley simmer another few mins then add the water and let it come to a boil and then lower heat to simmer place cover on pot askew for steam to release and simmer for 20 mins till everything is soft. In a smaller pot add 1 and 1/2 cups water to simmer then add lentils and cook till softened about 15-20 mins. Turn off heat, add the dry spices to the soup pot stir and add half the cooked lentils then with a stick blender puree the entire mixture till smooth. Add S&P for desired taste and add the other half of the cooked lentils to the pot and heat till bubbling. I like to take a few sage leaves and simmer them in olive oil till slightly crisp and place on top of each soup bowl but it's optional.
