Sweet Potato Gnocchi with Spinach, Sage and Vegan Butter
This is such a great combo, if you can find sweet potato gnocchi store bought mine were good quality frozen ones or use my basic gnocchi recipe and substitute potato for sweet potato and non vegans can use real butter. Here’s how I do it:
1 lb sweet potato gnocchi
1 12-14 oz bag fresh spinach
2-3 tbs vegan butter I use Miyokos it’s the best
1 tsp garlic granules or powder
1 small bunch fresh Sage chopped
In a large skillet add the vegan butter melt then add the garlic granules, Sage and spinach cook till wilted add S&P to taste. In a pot of boiling water cook the gnocchi till they rise then scoop them out and add to the skillet and combine, add a spoon of pasta water and addl butter if needed. Serve in bowls piping hot.
