I made this tasty stir fry with yu choy, a delicate savory green but it can be made with any type of cooked greens: spinach, kale, chard etc but if you can find yu Choy give it a try and any protein works, I used Gardein vegan beef tips.
Ingredients:
1 bunch of cooking greens, if using yu Choy trim off the thicker part of the stems
4 garlic cloves chopped
1 tsp red chili flakes
1 inch of ginger grated
protein of choice cut into small pieces 12-16 pieces
1 package soba noodles cook as per package instructions
2 tbs corn starch
For the sauce:
3 tbs soy sauce
1 tsp sesame oil
2 tbs rice vinegar
3 tbs water
1 tbs agave nectar
1 tbs sesame paste or peanut butter
In a skillet add some water and steam the greens till slightly softened 3-5 mins the drain and set aside. Place the corn starch in a bowl and dredge the protein pieces. Add some neutral oil to the skillet, heat up and brown the protein for 3 mins on each side, set aside. Combine all the sauce ingredients in a bowl. Add a little more oil to the skillet heat then add the garlic, chili and ginger simmer for 2-3 mins then add the greens simmer a few more minutes then add the sauce, browned protein and soba noodles, incorporate everything and serve in bowls piping hot.
