Polenta With Mushrooms and Herbs

Inspired by the Milan episode of “Searching for Italy“ I made this typical Northern Italian dish! I’m a huge fan of polenta hope you like it too. Here’s how I do i:
Ingredient:
1 cup fine corn meal
4 cups water
1 tsp salt
olive oil/butter 1-2 tbs of each
1 package fresh mushrooms, sliced I used baby Bella
1 clove garlic whole
fresh herbs: I used small bunch of parsley and Sage
grated Parmesan cheese to taste
In a sauce pot add the water and salt bring to a boil and slowly add the corn meal and whisk to avoid lumps. Cover with lid and whisk often and cook on low heat for at least 30-40 mins. In a separate skillet add some olive oil and butter and a whole garlic clove. I want the flavor to be delicate so I remove the clove at the end. Add the mushrooms and herbs and cover with lid and simmer till softened, add salt and pepper to taste. Towards the end of the corn meal cook time add a knob of butter and some grated Parmesan cheese about 1/2 cup and incorporat. The polenta should be firm enough to scoop out and arrange a portion on each plate, drizzle with the mushrooms and cooking liquid, fresh cracked pepper and an additional sprinkle of parm.
