Pizza With Spinach, Artichokes and Vegan Smoked Mozzarella

You can use my pizza dough recipe on my blog or store bought dough/crust is fine too. I also used my basic marinara sauce, also on the blog, to make this pizza. Non vegans can use real mozzarella cheese but this vegan brand is delicious. Here’s how I do it:


1 pizza crust either fresh dough or store bought stretched into a 12-14“ circle or rectangle.

1 cup basic marinara sauce

1 bag fresh spinach 12-14oz

3-4 cloves garlic chopped

1/2 tsp red pepper flakes

1/2 cup artichoke hearts cut in small pieces

1/2 cup smoked vegan mozzarella Miyokos makes a delicious one sliced or shredded

In a skillet add a little olive oil heat up then add the garlic and pepper flakes simmer 2-3 mins then add the spinach and cook just till wilted, add salt to taste and if you want to add some spice: basil, oregano do so now. Remove from heat let cool. Stretch your dough into a desired shape and place on a parchment covered pan, preheat oven to 425F. Spoon sauce over the crust then layer on the spinach then artichokes then mozzarella, you can sprinkle on some vegan Parmesan cheese also but it’s optional. Drizzle the top with a little olive oil and bake for 13-17 mins till crust is crisp and cheese melted eat piping hot! I slice mine with kitchen scissors.
