Pizza With Rapini and Vegan Mozzarella

I found a new vegan mozzarella made by Miyokos comes in a bottle I’ll include a photo and it’s a total game changer for Vegan pizza, it melts, bubbles and browns just like real mozzarella but of course if you’re not vegan just use real mozzarella. Here’s how I do it:


1 pizza crust of choice you can buy store bought or make your own see my basic pizza dough recipe on here

1 bunch Rapini (broccoli rab)

3-4 cloves garlic chopped

1/2 tsp red pepper flakes

1/3 cup grated Parmesan cheese vegan or non

1/2 cup vegan or non mozzarella

handful of chopped black olives (optional)

handful fresh basil or 1 tsp dried

First trim the thicker part of the stems off of the broccoli then steam till tender and drain in a colander. With kitchen scissors cut the broccoli into mouth size bites. In a skillet add a few tbs of olive oil heat up then add the garlic and pepper flakes, simmer a few mins then add the broccoli a good pinch or 2 of salt and simmer 5-8 mins stirring often till softened. Remove from heat. Place your crust on a pizza pan and spread the broccoli evenly over the surface then add the black olives, Parmesan and mozzarella cheese and top with the fresh or dried basil. Bake in an oven preheated to 425F for 12-15 mins till crust is golden brown and crisp. Serve immediately while hot.
