Pizza With Fresh Cherry Tomatoes, Basil and Balsamic Reduction

This is another cauliflower crust pizza, the store bought crusts are good or use my recipe in past blog to make your crust, this is an easy fresh delicious pizza. The balsamic reduction gives it a sweet note in contrast to the salty ones.


1 cauliflower crust

a dozen or so cherry tomatoes cut in half

3/4 cup shredded mozzarella cheese

a few tbs of Parmesan cheese 2-3

olive oil for drizzle

fresh basil leaves, handful, roughly torn

drops of balsamic reduction (optional)

Bake the crust as per instructions when crisp remove from oven and top the pizza first with mozzarella then tomatoes, Parmesan basil and a good drizzle of olive oil on top, return to oven and bake at 450F for 10 mins then set oven to broil and broil the top for 3-4 mins till slightly charred. Remove from oven and add drops of balsamic reduction if desired, and some cracked black pepper.
