Pizza with Broccoli Rabe, Vegan Ricotta, Mozzarella and Olives

I used a cauliflower crust pizza but any crust is fine and if you’re not vegan dairy cheese is just as delicious but I wanted to do a totally vegan pizza for this one. Here’s how I do it:


1 pizza crust, I used a cauliflower crust that I pre cooked till crisp.

1 head broccoli rabe, stems trimmed and steamed till softened

3-4 cloves garlic chopped

1/2 tsp chili flakes

2/3 cup vegan ricotta I like Kite Hill brand

1/2 cup vegan mozzarella I used Miyokos

Small bunch fresh basil torn in pieces

Handful of chopped black olives I used kalamata

In a large skillet add some olive oil 2-3 tbs heat then sauté the garlic for 2-3 mins add chili flakes continue to simmer then add the broccoli and sauté another 5-7 mins till softened, adjust S&P to taste. Set aside. On your pizza crust add the broccoli then spoonfuls of the ricotta cheese then scatter the basil leaves then add the olives and lastly top with the mozzarella. Bake at 475F for 10-12 mins till golden and crisp. Serve immediately top with some vegan Parmesan cheese and enjoy!
