Pizza with Broccoli Rabe, Ricotta and Black Olive Tapenade

This is a vegetarian yet indulgent pizza tons of flavor, I used a cauliflower crust but you can use regular dough crust home made or store bought. This is how I do it:


1 bunch broccoli rabe stems trimmed off and steamed till soft

1 large pizza crust, recipe for my homemade cauliflower crust is in previous blog

4 cloves garlic chopped

1 tsp crushed red pepper

1/2 cup ricotta cheese

1/3 cup Parmesan cheese

3 tsp black olive tapenade or chopped black olives

2-3 Tbs fresh basil leaves or dried

Add a few tbs olive oil to a skillet heat and add garlic and pepper simmer a few mins then add the broccoli some salt and simmer 3-5 mins, remove from heat set aside. Set oven to 420F, place crust on a pizza pan, add the broccoli evenly then add spoonfuls of ricotta and drops of the olive paste or black olives, sprinkle with parmesan cheese and chopped basil. Drizzle olive oil over the top and some fresh cracked black pepper. Bake for 10-12 mins till edges are crisp.
