Pasta alla Norma
I‘ve had this dish in restaurants, it’s a Sicilian classic and was featured recently in “Searching for Italy” so I decided to give it a shot, so delicious, here’s how I do it:
1 medium eggplant
2 cups marinara sauce
1/2 cup grated ricotta salata or Romano cheese if you can’t find it
chopped basil for garnish
I prepared a small pot of marinara sauce using 1can of whole San Marzano tomatoes simmered with some garlic and olive oil but any basic tomato sauce is fine even good quality jarred. I sliced the eggplant in long rectangular strips and simmered them in a skillet of hot olive oil, after they were browned on both sides I removed from the skillet and added the tomato sauce. I used fettuccine but any pasta works, while it was boiling I added the eggplant to the skillet of bubbling sauce. Drain your pasta add it to the skillet and combine it with the sauce and eggplant. Serve in bowls with grated ricotta salata or Romano cheese and chopped fresh basil.
