Oyster Mushrooms in Sesame Sauce with Edamame, Baked Tofu and Rice Noodles

I used the flavored baked Hodo protein chunks from my previous post to create this tasty stir fry, came out great give it a try, here’s how I do i:

Ingredients

1 package oyster mushrooms chopped

10-12 oz rice noodles

3 cloves garlic chopped

3 scallions chopped

1 package baked tofu or any protein cub in small cubes

1/2 cup edamame, shelled, defrosted if using the frozen kind

1 tsp sesame seeds


For Sauce:

2 tsp sesame past: tahini

2 tbs soy sauce

1 tsp rice vinegar

1 tsp agave nectar or honey

1 tsp sesame oil

2 tbs water


In a large skillet add a little neutral oil simmer and add the garlic and mushrooms and simmer 3 mins with lid partially on. Add the protein and edamam, continue to simmer. In a bowl combine all the sauce ingredients. Cook noodles as per package. Add the noodles and scallions to the skillet and pour the sauce over everything and simmer incorporate everything together for 2 mins. Serve in bowls and sprinkle with sesame seeds, black or white.
