Mandarin Orange Vegan Chickn with Broccoli

This can be made with any vegan protein I used Gardein vegan chickn morsels which work great. Here’s how I do it:


Ingredients

1 head of broccoli cut into florets

10-12 pieces of vegan chickn or protein of choice

3 cloves garlic chopped

1 inch grated ginger

3 tbs soy sauce

2 tbs water

1 tbs rice vinegar

2 tbs corn starch

1 tbs paprika

2 heaping tbs orange marmalade

1 tsp hot chili oil or sriracha sauce


First steam your broccoli florets till slightly tender, set aside. In a bowl add the corn starch and paprika and toss the protein nuggets till well coated, bake in an oven at 350F for 20 mins or air fry for 8 mins at 375F. Set aside. Add liquid ingredients to a bowl then add the marmalade stir till incorporated. Add some veg oil to a skillet and when hot add the garlic and ginger and simmer 2 mins then add the broccoli and a pinch of salt, simmer while stirring occasionally for 5 mins then add the sauce mixture continue simmering another 5 mins then add the protein and mix all together till everything is piping hot serve immediately over rice, noodles or on its own.
