Making Your Own Energy Bars
I love making my own energy bars, I get to control the ingredients, sweetness etc. Ive tried a few combinations but this one is my favorite, sweetened only with dates they are great before a work out or as an in between snack. You do have to own a food processor to make these.
14 dates I prefer medjool, split in half pit removed.
1 cup of almonds roasted or dried
3 heaping tbs good quality unsweetened cocoa powder
1/3 cup walnuts or any other nut you prefer
1/2 cup shredded unsweetened coconut
1/3 cup sunflower seeds
1/3 cup pumpkin seeds
Fill a bowl with warm water and soak the dates 15-20 mins. Put the almonds in the food processor and grind till nearly powdered. Drain the dates squeeze out excess water, add the the food processor with the cocoa and pulse till it’s a paste. Then add coconut, nuts seeds etc and continue to pulse till incorporated. Line a 13x9 pan with parchment paper and press the mixture flat with your hands and a spatula till about 1/4-1/2 inch thickness. Place in freezer for 3-4 hours then slice into bars, keep them refrigerated covered in plastic wrap and enjoy them whenever you want one!
