Making a Basic Marinara Sauce
I make this basic tomato sauce all the time, it’s great on pizza or pasta and it’s completely vegan. I never add sugar, the onion and carrots give it a natural sweetness, here’s how I do it:
1 carrot chopped
1/2 onion chopped
2 cloves garlic chopped
1 can San Marzano crushed tomatoes
small bunch fresh basil (optional)
In a large pot add 2-3 tbs olive oil heat up then add the carrot, onion and garlic and let simmer for 5 mins then add the crushed tomatoes and cover slightly and simmer for 20-30 mins. At this point I add some salt and the fresh basil sometimes a pinch of red pepper flakes then I cover the pot and let it rest for 15-20 mins then after that I use an immersion blender to purée the sauce and use right away or it can be refrigerated or even frozen in jars for later use.
