Linguine with Zucchini and fresh Basil

I had lots of fresh zucchini left after making the fritters so I made this classic summer pasta dish, we grew up eating this with fresh zucchini from my parent‘s garden. I like to add a bit of lemon zest for some brightness. Here’s how I do it:

Ingredients

3-4 zucchini cut into small pieces

3-4 cloves garlic chopped fine

1/2 tsp red chili flakes

1 tsp lemon zest

1 package linguine I used fresh, dried is fine or really any pasta you like

1 small bunch of fresh basil roughly chopped

grated Parmesan cheese for topping (optional)


In a large skillet add a few tbs of olive oil, heat then add the garlic and chili flakes simmer 2-3 mins then add the zucchini and simmer 5-10 mins till softened. In the meantime boil the linguine, when cooked till al dente add it to the skillet along with the lemon zest and basil, add a ladle or so of pasta water, simmer it all together and serve in bowls with grated Parmesan on top.
