Leek Frittata with Sage and Just Egg (v)

I made this delicious frittata with vegan Just Egg but it can be made with real eggs or egg whites, it’s so good! Here’s how I do it:

Ingredients

2 large leeks

1/-3/4 cup just egg or real eggs/egg whites

1 tsp ground turmeric

1 tsp ground paprika

1 small bunch fresh Sage chopped or 1 tsp dried sage

1/2 cup shredded vegan Parmesan cheese


First chop the top dark green leaves off of the scallions and the bottom, cut lengthwise in half then chop into thin slivers give a good rinse with water and spin them dry in a salad spinner. In a skillet add a few tbs olive oil, heat then add the leeks and a good pinch of salt and simmer, stirring often. In a bowl add the egg plus the turmeric, paprika and a pinch of S&P and whisk till incorporated. Add the sage to the leeks continue to simmer then add the egg mixture till it fills the skillet then add the cheese on top simmer on low heat for 5-7 mins pushing the sides down till the bottom begins to solidify then transfer skillet to an oven set in low broil and cook another 5-7 mins removing now and then to push the sides down with a spatula. Cook till golden and bubbly on top remove from oven let set for a minute then slide it onto a plate serve hot or warm.
