Italian Style Tomatoes with Spinach Stuffing

Growing up my grandmother used to make these delicious stuffed tomatoes, I’ve tried my best to recreate her recipe and have to say they came out delicious. Great as a first course or for lunch with a salad. Here’s how I do it:
Ingredients:
2-4 beefsteak tomatoes
3-4 cups of packed spinach
3 cloves garlic chopped
1/2 cup fresh basil chopped
2-3 tbs Italian Style breadcrumbs
2-3 tbs grated Parmesan cheese
olive oil
Cut the tops off of the tomatoes and with a spoon scoop out the inside till it’s pulp free. Set aside. To a pot of boiling water add the spinach and blanch for 30 seconds then drain and rinse in cold water. Drain the spinach and chop it. To a skillet add 2-3 tbs olive oil heat and add the chopped garlic a pinch of chili flakes and simmer 2-3 mins then add the spinach and simmer another 2 mins. Add a pinch of salt and the chopped basil and remove from heat. Add the spinach to a bowl and add the breadcrumbs and cheese and another tbs of olive olive @nd combine. Fill the tomatoes with the stuffing and bake for 20 mins in a preheated oven at 375F or place in air fryer for 10mins at 350F. Remove from heat add a drizzle of olive oil or pesto and enjoy.
