Italian Spinach Pie with Vegan Sausage and Mozzarella

This pie is completely vegan but for non vegans you can use real sausage and dairy mozzarella I used a cashew milk mozzarella that was very good, here’s how I do it:


16 oz pizza dough, I used fresh store bought dough

2 bags fresh spinach, I also included some Tuscan kale, any greens will do

4-5 cloves garlic chopped

1/2 tsp red chili flakes

1 vegan sausage cut into small pieces you can use 2 if you like a lot of sausage

bunches of fresh chopped herbs I used basil, parsley and oregano

1/2 cup vegan mozzarella

In a large skillet add 1tbs olive oil heat up then brown the sausage pieces for 3-4 mins till slightly crisp, remove and set aside. Add more oil then add the garlic and chili flakes simmer 2-3 mins then add the greens and herbs and cook till softened adjust salt to taste. Let cool then add the mozzarella. Take your dough and cut it in half, sprinkle a little flour on counter and roll them into 2 flat circles, like pizzas about 10” diameter. Spray a 9” pie pan with cooking spray and carefully place one of the doughs on the bottom, push the edges up to half way up the pan. Add the spinach mixture on top then carefully place the other dough on top and connect the 2. You can make air slits in the top I just poke holes with a fork. Bake on center rack in a preheated 350f oven for 30-35 mins till golden and crisp. Can be eaten warm or room temperature.
