This is a delicious vegan dish easy to make and can be made with any cooking greens: spinach, kale, chard but I chose escarole for its slightly bitter and nutty flavor. Also non vegans can use real sausage. Here’s how I do it:
Ingredients
1 head of escarole rinsed and torn into bite size pieces
2-3 tbs olive oil
handful of black olives, sliced
2-3 tsp of capers
3-4 cloves garlic chopped
handful raisins
2 vegan Italian style sausage sliced in bite size pieces
pinch of red chili flakes
In a large pot add the olive oil when hot add the garlic, chili flakes and simmer 2-3 mins then add the raisins and the torn escarole cover with lid and simmer till the escarole softens about 5-10 mins then add the Olives and capers adjust salt add a few spoons of water and continue to simmer. In an air fryer or skillet cook the sliced sausage till crisp, remove from heat. When the greens are complete soft add the sausage and another drizzle of olive oil and serve piping hot on its own with some crusty bread or great over pasta or your grain of choice.
