This is such an easy soup to make for a chilly winter evening full of delicious umami flavor. Here’s how I do it :
Ingredients
4-6 cups water
2-3 tbs of gold miso paste
1/2 cup dried shiitake mushrooms
1 cup firm tofu cut into small cubes
1 tbs soy sauce
1 tsp hot chili oil or sriracha sauce (optional)
1 tsp sesame oil
1 package fresh soba noodles you can also use ramen
1/2 cup chopped scallions
First add some boiling water to a small bowl and soak the dried mushrooms for 30 mins till they are soft. Add the 4-6 cups water to a soup pot and when hot add the miso paste, mushrooms and simmer a few minutes then add the soy sauce, sesame oil, sriracha and tofu, incorporate then add the soba noodles and simmer 2-3 minutes till cooked then lastly add the chopped scallions and serve piping hot.
