Gluten Free Banana Bread with Chocolate Topping
I had some ripe bananas and researched various recipes and tweaked to my liking. You can use ordinary flour also and for completely vegan use 1/2 cup applesauce instead of egg. I used vegan butter regular is fine. Here's how:
3 very ripe bananas
1/3 cup melted butter or vegan substitute
1 beaten egg or 1/2 cup applesauce
1/2 cup light brown sugar, most recipes called for 1 cup, I reduced by half.
1 and 1/2 cups flour, gluten free or regular
1 tsp baking soda
1 tsp vanilla extract
pinch of salt
1/2 bar dark chocolate roughly chopped
In a large bowl mash the bananas then add the melted butter, combine then add the egg or applesauce, sugar, baking soda and vanilla, combine. Lastly add the flour and incorporate to form a blended batter. Butter a loaf pan, preheat oven to 350F, pour batter in pan and bake for 45 mins. 15 mins before it's done add the chopped chocolate to the top and return to oven so it melts. Enjoy!
