Fresh Cod With Potatoes, Tomatoes, Olives and Capers

This is one of my mom’s favorite dishes so I made it for, any seafood lovers out there it’s great with some crusty bread to soak up the sauce, here‘s how I do it:


1-1/2 lbs fresh cod cut into 3” sections

1 large potato peeled cubed in small pieces and boiled till almost fork tender

1 medium onion chopped

2-3 tomatoes cut in cubes seeds removed

1/3 cup black olives chopped

2-3 tsp capers

splash of white wine

chopped parsley for garnish

In a large skillet add a little olive oil heat then add the onion and simmer 2-3 mins then add the olives, tomatoes, potatoes and capers plus a little extra caper liquid continue to simmer then add the cod and a good splash of white wine cover with a lid and simmer for 5-8 mins till fish is cooked, serve in bowls with lots of the liquid and hot crusty bread this should serve 2-4 people
