This is a traditional Italian style fish dish and a family favorite. Mom taught me how to do it and although I’m mostly vegan/vegetarian, a few times a year for eat seafood. Here’s how I do it:
Ingredients
1-1/2 lbs fresh cod, cut into cubes
3 medium red potatoes, scrubbed and cut into small cubes, parboiled for 5-8 mins
4 plum tomatoes, cut in quarters
1/2 white onion, diced
2 cloves garlic minced
1/2 cup white wine
1/2 cup chopped black olives
1-2 tsp capers
olive oil
fresh parsley
pinch of crushed red pepper
In a large skillet add some olive oil, add the onions, garlic and crushed red pepper and a pinch of salt, Add the pre boiled potatoes, tomatoes and simmer for 3-5 mins till tomatoes break down then add the cod, olives, capers, wine and cover with lid and simmer 10 mins till fish is cooked, adjust salt, add chopped fresh parsley stir a few more minutes and serve.
