Focaccia with Tomatoes Olives and Herbs
I entertained this weekend and made this focaccia from pizza dough, it was super tasty and easy to make, here’s how I do i:
1 lb pizza dough either home made or fresh store bought
2 plum tomatoes thinly sliced
handful of black olives sliced
3 tbs olive oil
1/3 cup fresh chopped herbs I used rosemary, oregano and marjoram
First make sure the dough is at room temperature then oil a 13x9 baking pan then coat your hands with oil to work the dough so it doesn’t stick, don’t add flour. Stretch the dough till it fills the pan then with your fingers make dimples in the dough. Add the herbs to a bowl then add the olive oil. Brush the dough with the oil/herb mixture but reserve some for later, sprinkle a little coarse salt on the dough then place in center rack of oven preheated to 425F. After 8 mins take out of oven and layer on the tomatoes and olives, brush with the remaining oil herb mixture another light sprinkle of salt and some fresh cracked pepper then bake for another 15 mins till golden and crisp on the edges.
