I love this pasta with fresh sauteed broccoli rabe, basil and spicy pepperoncino. Here’s how I do it:
Ingredients
1 bunch broccoli rabe, stems trimmed off
3 cloves garlic chopped
1 cayenne chili pepper chopped or 1 tsp red pepper flakes
2-3 tbs fresh chopped basil
2-3 tbs fresh grated Parmesan cheese
1 12 oz package fresh fettuccine
In a large pot of water add plenty of salt, set to boil In a skillet add a few tbs olive oil, heat then add the garlic and pepper a pinch of salt and sauté for 2-3 mins. Add the broccoli rabe and pasta to the boiling water and boil till pasta is al dente, drain in colander but save a bit of pasta water. Add the pasta and fettuccine to the skillet and simmer/combine for 3 mins. Add a little of the conserved pasta water continue to simmer then serve in bowls with Parmesan cheese and fresh chopped basil.
