Egg White Scramble with Tomatoes and Herbs
Some days I’m completely vegan, no dairy or eggs but once in a while I like this power protein breakfast with egg whites, fresh tomatoes and herbs from my garden, I used some vegan mozzarella and cheddar but you can use real cheese if you eat dairy and liquid tofu or Just Egg can be used to make it completely vegan.
1/2 cup liquid egg whites or egg substitute
1 tomato chopped, I remove the pulp and seeds
Chopped fresh herbs: as much as you like I used parsley and basil
shredded vegan cheddar and mozzarella or any cheese you have on hand
In a skillet add 1-2tsp of olive oil, medium heat then add the tomatoes and simmer 2-3 mins add S&P to taste then stir in your herbs and simmer another minute then add the egg whites and stir then lastly add the cheese and incorporate till it’s melted don’t overcook or it’ll get dry. I like to serve with fresh chopped parsley on top.
