Egg White Frittata With Fresh Spinach and Mushrooms

This is great for a light dinner, though not vegan it’s vegetarian and any cheese can be used on top, even a vegan one. Here’s how I do it:


1 bunch fresh spinach about 3-4 cups

1 small package mushrooms I used baby Bella, chopped

4 cloves garlic chopped

1 small red chili chopped

1/2 cup egg whites, I use the type from a carton

small bunch fresh herbs I used parsley and basil, chopped

1/3 cup shredded cheese for topping I used mozzarella

Heat a few tbs of olive oil in a skillet and add the garlic and pepper simmer 2-3 mins then add the mushrooms a pinch of salt and sauté till softened, add herbs and fresh spinach continue to sauté adjust salt and when wilted add the egg whites keep flame low, swirl pan and keep pushing the whites to the center firming it up. Add the cheese to the top then place skillet in an oven on low broil and broil for 5-6 mins removing frequently to press the sides towards center with a spatula. Cook until the cheese gets golden and slightly crisp. Remove from oven slide carefully onto a serving plate.
