Make sure you have a skillet with a metal handle I use cast iron, this is a savory dish lots of texture and flavor, here’s how I do it:
Ingredients
1 spaghetti squash cut in half, oiled and sprinkled with S&P
About a dozen crimini mushrooms sliced
2-4 cloves garlic chopped fine
Fresh or dried herbs I used fresh parsley and marjoram
A few tbs of Romano cheese
A few tbs of Italian breadcrumbs
Place the squash cut side down on a baking sheet covered in parchment paper and bake for 30-40 mins in a 375F oven. Remove let cool. In a skillet add a few tbs olive oil then add the garlic simmer 2 mins add the mushrooms and simmer then add fresh herbs S&P to taste till slightly softened. Scrape the squash out of the shell with a fork and add to the skillet. Mix in the Romano cheese simmer another 2 mins then sprinkle the top with the breadcrumbs and more cheese and place under a broiler for 5-8 mins till the top is crisp and golden. Serve piping hot with a drizzle of olive oil.
