Perfect for a chilly day my cauliflower soup is rich, creamy and completely vegan, give it a try! Here’s how I do it:
Ingredients
1 head of cauliflower cut into florets
1 onion, diced
2 celery stalks, chopped
4-6 cups vegetable stock, or water
1 tsp umami mushroom powder, I used Trader Joe’s brand or any mushroom powder but can be optional
small bunch fresh Sage or dried
3 tbs nutritional yeast
1 can coconut milk
chopped chives for garnish
In a large soup pot add a little veg oil, I used olive then add your onions and celery and simmer 2-3 mins add pinch of salt. Then add the cauliflower and sage and stir, simmer another 3-5 mins, then add the veg stock cover with a lid and simmer 15-20 mins till everything is softened, add S&P to taste then add the mushroom powder and nutritional yeast and simmer another 2 mins then using an immersion blender purée the entire soup pot till smooth. Add the coconut milk continue to simmer another few minutes then serve piping hot with fresh chopped chives or scallion as a garnish.
