This is a quick and hearty delicious pasta dish grear paired with a green salad for a perfect dinner. Here's how I do it:
Ingredients
1 package crimini mushrooms
3-4 garlic cloves chopped
1/2 cup fresh petite peas or defrosted frozen
Pinch of crushed red pepper
3-4 heaping tbs of good quality pesto
1/3 cup grated Parmesan cheese
Handful of fresh chopped basil (optional)
Slice your mushrooms into small pieces, heat a skillet with a few tbs of olive oil, add the garlic and pepper simmer 2-3 mins then add the mushrooms set flame to low and sauté till mushrooms are softened, add salt to taste. Meanwhile boil your cavatelli, or any pasta really, according to instructions. Scoop the cooked pasta directly into the skillet and add a ladel of pasta water. Turn off the flame then add the pesto sauce and incorporate then add the Parmesan cheese and shredded basil and toss through the pasta. Serve piping hot with an extra sprinkle of cheese.
