Cavatelli with Broccoli Rabe and Italian Sausage (V)
I found these amazing artisan cavatelli imported from Italy and made them with my favorite vegetable, Broccoli Rabe or Rapini and used vegan Italian sausage so good give it a try. Here’s how I do it:
1 bunch broccoli rabe stems trimmed and steamed for 5 mins till tender
3-4 cloves garlic chopped
2 Italian sausage sliced in ovals, I used vegan sausage.
1/2 tsp red chili flakes
2-3 tbs sliced black olives
1 package cavatelli 10-12oz
2 tbs pesto sauce (optional)
Parmesan cheese for topping (optional)
In a large skillet add a little olive oil when hot add the sausage and brown on each side for 5 mins, remove from skillet set aside. Add a little more olive oil the chopped garlic and chili flakes and simmer 2-3 mins then add the steamed broccoli rabe with a few pinches of salt and sauté for 8-10 mins till softened then add the olives and pesto sauce, set on low and boil the cavatelli per package instructions. Add the sausage back to the skillet, drain the pasta but retain a little pasta water. Add the pasta to the skillet a few spoons of pasta water and incorporate everything together. Serve piping hot topped with fresh grated Parmesan cheese, I used vegan but regular can be used for non vegans.
