Who doesn't love pizza? I really love pizza but as many know, I live a very low carb lifestyle. This cauliflower crust has no flour is low carb and when baked till crisp is really delicious. Sure, you can buy the store bought ones but I find homemade tastes so much better. I make it with real cheese, you can use vegan cheese but it's not as luxurious. Here's how I do it:
Ingredients:
1 head of cauliflower cut into florets
2 eggs, beaten
1 cup of shredded mozzarella cheese
1/4 cup parmesan cheese
1/2 tsp garlic granules or powder
fresh basil, or dried if you dont have
1 cup cooked tomato/pizza sauce
Put the cauliflower in a food processor and pulse till riced. Steam the cauliflower in a pot till slightly soft, drain in colander let cool then pour it into cheesecloth or a thin kitchen towel and wring out all the moisture, get it as dry as you can. Preheat your oven to 425F. Place cauliflower in a bowl, add the eggs, parmesan cheese, half of the mozzarella, salt, pepper and garlic powder and combine it till well incorporated. Place a sheet of parchment paper on a baking sheet and press the mixture into a circle, about 1/4 thick. Bake in oven for 20 mins till crisp. Remove from oven, add the pizza sauce, the remaining mozzarella and a handful of fresh torn basil leaves and a light drizzle of olive oil, return to oven and bake another 8-10 mins till cheese is bubbling. Remove, cut into slices and enjoy.
