Baked Yam Stuffed with Chana Masala
This is a great quick meal when I don’t want to do a lot of cooking that doesn’t taste quick super healthy and delicious. I use a frozen chana masala (chickpea curry) from Trader Joes but you can certainly make one from scratch. Here’s how I do it:
1-2 medium to large fresh yams
1 package frozen chana masala
chopped greens for garnish (optional)
Preheat your oven to 400F, prick the yams with a fork all over and bake for 40-50 mins till fork soft. Cook the chana masala per package instruction, split the yams in half and pour the masala over them, I used some sriracha sauce for a bit of heat and some chopped micro greens from my garden.
