Asian Noodles With Spinach, Shitake Mushrooms in Spicy Yakisoba Sauce

I used a bottled organic Yakisoba sauce for this dish, easy to make your own or any stir fry sauce well. You can also add any protein of choice I chose to make it with just veggies. Here’s how I do it:


1 bag or 3-4 cups of fresh spinach (frozen not good for this recipe)

1 package shiitake mushrooms sliced in thin slices

4 cloves garlic

1 chili pepper or crushed red pepper

3 scallions chopped

1 inch grated fresh ginger or 1 tsp ginger powder

3-4 tbs Yakisoba sauce

1 package Asian noodles, I used lo mein noodles

In a large skillet heat a few tbs of vegetable oil when hot add the garlic, ginger, pepper some salt and simmer 3 mins then add the sliced mushrooms and simmer till softened then add the spinach till wilted then add the scallions and Yakisoba sauce. Flash boil the noodles for 1 minute then add to the veggie and toss to incorporate. I like to add a drizzle of sesame oil at the end but it’s optional. Serve in bowls piping hot.
