Sautéed Broccoli with Herbs and Vegan Italian Sausage

I make this dish all the time, really savory and of course if you eat meat you can make it with real sausage, it can be eaten on its own or over pasta. Here’s how I do it:

Ingredients

2-3 vegan sausages cut in slices

1 large head of broccoli cut into florets

3-4 cloves garlic chopped

3-4 tbs olive oil

1 tsp red chili flakes or 1 chopped red chili pepper

bunches of fresh herbs, I used basil, marjoram and oregano, chopped


In a large skillet add a few inches of water and the broccoli and steam till slightly tender, drain the broccoli set aside. Add a few spoons of olive oil heat then add the sliced sausage and cook for a few mins on each side till browned and crisp, remove from skillet set aside. Add a bit more oil then add the garlic and chili simmer a few mins then add the broccoli and sauté for 10-15 mins till broccoli gets caramelized, add salt to taste, add the chopped herbs and pre cooked sausage and simmer another few mins till sausage is hot. Drizzle with a bit more olive oil and serve piping hot in bowls.
