Broccoli and Bok Choy with Vegan Beef in Garlic/Ginger Sauce

This is my take on an Asian beef with broccoli but vegan style you can use real cubed beef or any protein you like. Here’s how I do i:
Ingredients
1 head broccoli cut into small florets
4-6 small bok Choy heads chopped
6-8 cloves garlic chopped
1 red chili pepper chopped
1-2“ grated ginger
2-3 tablespoons soy sauce
1 tsp brown sugar
1 tsp rice vinegar
12 or so pieces of cubed vegan beef I used Gardein or protein of choice
2 tbs corn starch
1/2 tsp sesame oil
In a large wok or skillet add the veggies and a little water and steam the veggies 2 mins drain water set veg aside. Add 1-2 tbs neutral oil to pan, heat up then add the garlic, ginger and pepper and simmer 2-3 mins, add the veggies simmer a few mins then add the soy sauce, brown sugar, vinegar and a few spoons of water, simmer a few mins. Create a well in the center of the pan. Dredge the beef in corn starch and add the the well and cook on each side a few mins then incorporate everything together continue cooking, add sesame oil and serve piping hot in bowls over rice, noodles or grain of choice.
